Roasted Lemon & Thyme Chicken Recipe!

Check out this amazing chicken recipe which we cooked in our Giovanni Pizza Oven in the LLK Development Kitchen!
1 large free-range chicken (Red Tractor Assured)
1 handful of fresh thyme
200ml Dry White Wine my favourite to use is an Italian Pinot Grigio
Salt & Ground Black Pepper
We cooked our Roast Chicken with Lemon and Thyme in our Giovanni Pizza Oven (Dual Fuel) but you could cook this dish in any of our ovens!
Firstly, set the temperature on the oven to 190°- our Giovanni oven takes approx. 20 mins to heat up, so this gives you plenty of time to prep the rest of your dish!
Then cut the lemon into quarters and push into the chicken cavity, along with the fresh thyme and place into a roasting dish. Once this is done, liberally rub olive oil over the chicken and season with salt & pepper. Then take your wine and pour into the base of the roasting dish.
Cover the chicken with tin foil and place in the oven for 20 minutes.
After 20 minutes remove the chicken from the oven and remove the foil. This will allow the chicken skin to get nice and crispy.
To check if the chicken is cooked insert a probe into the meat. If the probe reaches the temperature of 75 ° the chicken is ready! Remove the chicken from the oven and leave to rest for 20 minutes.
